Clams in White Wine (Chirlas al Vino)
Clams in white wine the Spanish way. This is a great recipe I learned in Spain, and I absolutely love it. Of course, being me, I started combining the traditional recipe of my family Clams with ginger and tomatoes, but first i`ll show you the Spanish way. another Healthy food on a budget.
1/2 Kg. de chirlas ( 1/2 kg. Clams)
1 Cd. de aceite (1 tbsp. oil)
2 cebollas medianas (2 medium onion finely chopped)
2 dientes de ajo (2 sliced of garlic finely chopped)
un mogollón de perejil fresco ( 1 tied of fresh parsley finely chopped)
1 Cd. de harina ( 1 tbsp. flour or bread crumbs)
1 vaso de vino (1 glass of white wine)
1 vaso y 1/2 de agua (1 and 1/2 glass or water)
sal (salt to taste)
1 hoja de laurel (1 laurel or bayleaf)
Procedure;
Wash clams or better to put in a water with salt for an hour before boiling. Let all the shells open and set it aside. In a pan, saute garlic, onion and parsley, not so brown. Get a strainer and squeeze the sauted ingredients to make it more tasty. put back in a pan add the water and wine bring to boil add the bread crumbs stir and add the clams. serve with plain rice.
