Coco Jam
Inang Dodet Coco Jam, one of my biggest bonding moments with my grandmother is eating this sweet sticky jam paired with our homemade pandesal, monay, or suman using whatever was available in her kitchen. I just suddenly realized how long it’s been since I’ve been with her. I can’t wait to see her again when I go back to the Philippines!
Ingredients
4 cups coconut milk
2/3 cups glucose
1/2 cup brown sugar
1 cup palm sugar (panutsa), crushed and chopped
Procedure;
Put coconut milk and glucose in a saucepan. Bring to boil mixing continuosly. Add brown sugar and panutsa when mixture boils. Reduce heat and stir until mixture becomes thick. Turn off heat and let it cool. When completely cooled, transfer into sterilized airtight jars.
