Ilocos Empanada
Empanada is a huge specialty in Ilocos, Philippines, and definitely one of my favorite spins on the Empanada is Vigan empanada and miki. My Ilocana friends here in Spain always served this amazing dish to me, and I have to say, I don’t just like it…I love it!
3 tbsp oil
2 cloves garlic chopped
2 medium green papayas grated
1/2 cooked monggo beans
1/4 kilo Vigan Longganisa, casing removed and cooked
6 medium eggs
you can use Lumpia wrapper, or my empanada dough recipe in this website
oil for frying
1 sachet maggi magic sarap optional
Procedure;
Saute garlic in hot oil until fragrant. Stir fry papaya and monggo. Season with maggi magic sarap, mix well, combine to cool.
Lay empanada dough or Lumpia wrapper, fill with sauteed vegetables and longganisa. Break one egg on top of the mixture and fold lumpia wrapper in half and immediately seal. Deep fry until golden brown.
















Try the ilocos empanada along New York St at the back of Stella Maris. They say it’s good.
