Seafood Pasta

Seafood Pasta – a very simple and healthy recipe, filled with so many flavors from the clams and white wine, to the chicken broth and spices. A great healthy food on a  budget.

2 tbsp olive oil
15 small clams (scrubbed-dried)
1 Cup dry white wine or (chicken broth if no available wine)
2 Tbs.butter
1/2 Cup flat leaf parsley (it’s more flavorful)
3 cloves garlic minced
salt & pepper to taste
1/4 kilo pasta

Directions:
Cook the pasta
Heat the oil in a large skillet over med. heat. Add the clams. Stir , increase heat to med-hi and cover. Check the clams evey minute or so. When the first clam opens add the wine and butter. Continue to cook shaking the pan from time to time. When most of the clams are open add the parsley, garlic, salt & pepper. Reduce heat to med.
Remove clams from skillet, pour sauce over pasta and toss. Arrange clams onto pasta.

I had to break this recipe down, now it serves two but you can double, triple etc. Enjoy!
