Sinigang na Sugpo sa Buko

Sinigang na Sugpo sa Buko – A classic and comforting soup I once tasted in a restaurant in Albay Philippines, I was surprised with the coconut juice and coconut meat that blends the taste of the young tamarind, really fantastic taste!

Sinigang na Sugpo sa BukoIngredients;

1 cup fresh young tamarind

1/2 cup taro root (gabi), sliced

2 fresh medium tomatoes, chopped

1 medium white onion, chopped

1/2 cup string beans, cut into 2 inch pieces

1/2 cup white radish sliced

2 finger chilies (siling pansigang)

200 grams medium tiger prawns

1 cup fish sauce

juice and meat of a young coconut (buko)

1 cup swamp cabbage (kangkong)

 

Procedure;

Place the young fresh tamarind in boiling water for about 8 minutes then strain. Add taro to the pot of boiling tamarind soup stock and allow to cook. Add all vegetables (except the kangkong) and the tiger prawns, and boil for 2 minutes. Season with fish sauce, Add buko juice and meat together with the kangkong then turn off fire.  Serve immediately.
